Quick and easy holiday food: Baked avo with creamy curried chicken breasts

4 avocados, halved and pitted

2 cooked chicken breasts, chopped

½ cup cream cheese, softened

1/4 cup chopped tomatoes

1/4 cup chopped, sautéd onions

salt and ground black pepper


1 tspn mild curry powder

½ cup grated cheddar cheese

Preheat oven to 200° C

Scoop out some of the flesh in the centre of each avocado; place into a mixing bowl. Add chicken, cream cheese, tomatoes, onion, salt, pepper, and curry powder; mix well to combine. Spoon chicken mixture into the wells of each avocado and top with grated cheddar cheese and a sprinkling of paprika. Place avocado halves on a baking tray.

Bake in a preheated oven until the cheese is melted, 8 to 10 minutes.
